Pizza Dough


There is nothing better than having fresh pizza with fresh pizza base. There are various pizza base recipe around the internet. thin crust pizza base, sweetness of the Roma tomatoes and fresh ingredients on top.

Ingredients                      Quantity

Plain Flour                       400 Gm
Dry Yeast                        10   Gm
Sugar                                 5  Gm
Salt                                  To Taste
Water or light milk            150 Gm

Mix all the dry ingredients, then kneed the dough till light and soft. leave dough at warm place covered with wet cloth. Continuously check if dough grow double in size, once ready knock back (kneed) and ready to use.
Note-Always remember never add all the water at same time, add half then other half of half and then rest as needed.            
Cottage cheese/ Paneer


Cottage cheese is a great source of calcium, which is helpful in maintaining strong teeth and bones. Due to its   low lactose content, it protects the teeth against harmful sugars.
Cottage cheese good source of Vitamin D, which along with calcium, facilitates in preventing cavities and  wearing down of the tooth enamel. So, regular consumption of cottage cheese is helpful in preserving good  dental health.
Vitamins B complex present in cottage cheese is essential for the formation and strengthening of cartilage in  children, women (pregnant and lactating) and men. This also helps in absorption and distribution of calcium in  the body.
For people who are underweight, cottage cheese helps you put on those extra pounds. It contains generous  amount of proteins, fats, calcium, vitamins, and minerals, which help in boosting weight.
Cottage cheese is also known to enhance blood formation, strengthen the liver and facilitate absorption of nutrients.
So as we see cottage cheese is full of benefits then why not we make our own paneer in half the cost you buy from super market, Making paneer hardly takes 15 minute.


Recipe

Milk  -   1 lt
Lemon- 1

Heat milk below boiling point, add lemon juice and stir well, adding citric acid/lemon separate milk protein and whey. Strain it through muslin cloth and keep some weight on it it will come as a block.

Butter Chicken


There are various recipes  of butter chicken around the globe, some with bone and some without bone.The best is with boneless thighs. The chicken is marinated overnight in yoghurt, ginger garlic, lemon ,oil, seasoning, coriander and chilli. The chicken is traditionally cooked in tandoor.

Tandoori chicken

Ingredients                                                    Unit
Chicken thigh boneless                                   4 no
Ginger garlic paste                                         1 Teaspoon
Garam Masala powder                                  1 Teaspoon
Cumin powder                                              1 Teaspoon
Red chilli powder                                          1 Teaspoon
Chat masala                                                  1 Teaspoon
Salt                                                               To taste
Turmeric                                                       1 Teaspoon
Yoghurt                                                        6 Tablespoon
Degi Mirch powder                                      1 Tablespoon
Coriander powder                                       1 Teaspoon
Fenu Greek Leaves                                      1 Teaspoon
Lemon Juice                                                 1 Tablespoon
Oil                                                               2 Tablespoon
Pepper                                                        1 Teaspoon

Mix all the ingredients and rub on the chicken and marinate minimum for 4 hour. Once marinated cook in tandoor or in oven first on high heat at 300 degree Celsius for 7 Min and then slow cook on 170 degree for 15 Min.

Recipe Of Butter Chicken Sauce

Ingredients                                                     Unit
Ginger Garlic paste                                         1 Tablespoon
Green Cardamom                                           3 No
Tomatoes                                                       500 Gm
Kasoori Methi                                               1 Teaspoon
Butter                                                            100 gm
Salt                                                               To Taste
Green Chilli                                                   25 Gm
Kashmiri Red chilly                                        70 Gm
Sugar                                                            50 Gm
Cream                                                          50 ml
Tandoori chicken                                          500 Gm
Garam Masala                                              1 teaspoon
Bay leaves                                                    2 No
Cloves                                                          3 No
Tomato paste                                               2 Tablespoon

Heat oil add bay leaves, green cardamom and clove, cook till Fragrant. Add ginger garlic paste cook till golden brown colour. Add crushed tomato purée and tomato paste to it.Add all the spices and cook till it leaves oil. Once cooked Blend  and strain. Take it back to stove add sugar, butter and Tandoori chicken and all the juices came out of chicken.While finishing add cream.

 Malai Kofta

Thick creamy gravy with light soft cottage cheese and potato koftas curry is best vegetarian alternative for meat balls. There are various recipes around the internet but it is hard to find one that is real. Here on this page I am trying to share one of my own recipes.



For Koftas

Ingredients                                            Unit
Paneer (Cottage cheese)                         100 gm
Potato boiled (Medium size)                    1 no
Salt                                                         To Taste
White Pepper                                          To Taste
Corn Flour                                              20 gm

Mash potato and paneer together, Season it with salt and pepper. Add or dust some corn flour on the mix and fry to check if binding is right. if the mixture splits add some more corn flour and fry again. The texture should be as light as possible. Make balls and fry to golden brown colour.

For Tomato Sauce

Ingredients                                               Unit
Tomato                                                    500 gm
Ginger chopped                                        50 gm
Garlic chopped                                         30 gm
Green chillies                                              2 no
Bay leaves                                                  2 leaves
Clove                                                          3 no
Black Cardamom                                        3 no
Cardamom Powder                                     1 Table spoon
Coriander Powder                                       1 Table spoon
Garam Masala                                             1 Table spoon
Tomato paste                                               2 Table spoon
Coriander Stalks                                          1/2 bunch

Take a thick bottom pan, add oil and heat. Add Bay leaves , Clove and Cardamom and stir still fragrant.
Add ginger garlic and cook till golden brown colour. Chop tomatoes and add it to the oil and tomato paste as well. Cook it till cooked (approx 30 Min). Once cooked, blend and strain.

For White sauce

Ingredients                                                Unit
Cashew nut                                               100 gm
Mellon Seeds                                             70 gm
Poppy Seeds                                              60 gm

Soak every thing together and make thick paste out of it.

Now is final step of  the dish.Take little butter in a thick bottom pan add tomato purée and add dry spices to it. Cook till it leave oil and add that nut paste to it. Add cream paneer chunks and koftas at the end just before serving.
