Malai Kofta
Thick creamy gravy with light soft cottage cheese and potato koftas curry is best vegetarian alternative for meat balls. There are various recipes around the internet but it is hard to find one that is real. Here on this page I am trying to share one of my own recipes.For Koftas
Ingredients Unit
Paneer (Cottage cheese) 100 gm
Potato boiled (Medium size) 1 no
Salt To Taste
White Pepper To Taste
Corn Flour 20 gm
Mash potato and paneer together, Season it with salt and pepper. Add or dust some corn flour on the mix and fry to check if binding is right. if the mixture splits add some more corn flour and fry again. The texture should be as light as possible. Make balls and fry to golden brown colour.
For Tomato Sauce
Ingredients Unit
Tomato 500 gm
Ginger chopped 50 gm
Garlic chopped 30 gm
Green chillies 2 no
Bay leaves 2 leaves
Clove 3 no
Black Cardamom 3 no
Cardamom Powder 1 Table spoon
Coriander Powder 1 Table spoon
Garam Masala 1 Table spoon
Tomato paste 2 Table spoon
Coriander Stalks 1/2 bunch
Take a thick bottom pan, add oil and heat. Add Bay leaves , Clove and Cardamom and stir still fragrant.
Add ginger garlic and cook till golden brown colour. Chop tomatoes and add it to the oil and tomato paste as well. Cook it till cooked (approx 30 Min). Once cooked, blend and strain.
For White sauce
Ingredients Unit
Cashew nut 100 gm
Mellon Seeds 70 gm
Poppy Seeds 60 gm
Soak every thing together and make thick paste out of it.
Now is final step of the dish.Take little butter in a thick bottom pan add tomato purée and add dry spices to it. Cook till it leave oil and add that nut paste to it. Add cream paneer chunks and koftas at the end just before serving.
